Ok... so you've eaten 5 mangos every day for lunch this week, and you used 2 lbs of mangos for your Mango Chutney Recipe last night. Now its time for something a little sweeter. Lets use the last of the Mangos from your Fruit of the Month Club and make some Caramelized Mango Slices with Ice Cream.
Caramelized Mango Slices with Ice Cream
Ingredients:
Ripe mango, about 1 pound
1 tablespoon butter
1 tablespoon brown sugar
1 tablespoon lime or lemon juice
2 tablespoons orange liqueur
2 tablespoons rum
2 large scoops vanilla, strawberry, or lemon ice cream (vanilla bean is best)
Slice of lime or lemon
Cooking Instructions:
Cut your mango in half and peel. Cut each half into long slices that would be enough for 2 servings. Grab a large heavy skillet (9 inch if possible) and heat your butter over low heat. Add your brown sugar and lime juice to the pan and stir. Add your mango slices next and shake pan a little until your mango is soft and somewhat plump. This could take 2-4 minutes depending on the mango ripeness.
Now get your fire extinguisher ready:
Add the rum and liqueur and tilt the pan to flame. (This is why you need the big, thick pan.) So shake your stuff like Emeril and Wolfgang Puck do on their Gourmet Chef Shows until the flame dies out. Grab two dessert plates immediately and scoop your ice cream on each. Throw some lime down and serve right away.

When I first saw this recipe, I was like "WOW...this looks really good."
I kept reading and got scared at the whole "Add liqueur and rum and tilt pan to flame." FLAME! Are you kidding me? You want me to purposely make a fire in my kitchen? As it is, I can make the smoke detector go off without doing it on purpose. Then I thought that it would be wrong to share a bland mango recipe, when this one is so good. My new rule for posting recipes will be to assume that my readers can cook even when I can't. (However if you are like me and only eat the good recipes, I suggest having a fire extinguisher handy if you decide to try this one out.)
