Mango Chutney Recipe

Ingredients:
1/4 cup paked brown sugar, light or dark
1/4 cup sherry
1/4 cup distilled white vinegar
1/4 cup raisins, golden or dark
5 whole cloves
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup (1 small) finely chopped onion
1 large or 2 medium (1 1/2 pounds) firm-ripe mangos, cut in small cubes or coarsely chopped to equal about 2 cups
2 tablespoons lime or lemon juice

Cooking Instructions:
1. Add all the ingredients except the mangos and lime juice into a medium size pan. Make sure you use a non-aluminum pan. Bring to a boil then reduce the heat and simmer for about 5 minutes.

2. Add the mangos and simmer/stir for another 5 mintues or until sause is a thick paste. Once thick, remove from heat and add lime juice. Place in a serving dish and cool for about 2 hours. Chill in refridgerator if necessary.

As stated in my previous blogs, April is the Mango month for Ruma's Fruit of the Month Club. So now that you have your mangos, what will do with them? You can take one to lunch everyday...a mango late night snack perhaps? 5-6 days of eating your mangos plain isn't very appetizing. Neither is dipping them in chocolate or cutting them in cute little shapes like a gourmet chef on one of those psycho cooking shows. (You know the chef tv shows that make 10 new chefs make a 7 course meal in the standard 30 minute sitcom time.)

Anywho...I love Indian food and I saw a recipe for Mango Chutney. Personally I always order Chicken Tikka Masala when I go out to eat, but Mango Chutney Recipe is fast becoming a favorite by me and my friends. Mango Chutney is great to put on beef, chicken, duck, turkey, and shrimp. I like it best with beef. I know its easier to buy Patak's Mango Chutney in a bottle at the supermarket, but that can get expensive. Also not many grocery stores carry those gourmet cooking sauces. In fact, some supermarkets don't even have an International Aisle at all! So of course we can't rely on the ready made option as much as we would like to. So I have found this great Mango Chutney Recipe and I hope that you and your family enjoy it. Enjoy!
